Whenever I go out with the girls for brunch after scouring the menu we tend to choose our old favourite; eggs benedict. With having a wheat and dairy intolerance I am now forced to choose something else. This morning I had a craving for eggs benedict so I scratched my head and got creative. Instead of a muffin I made a savoury pancake with spelt flour, soya milk, adding in some milled flaxeed. Instead of a hollandaise sauce I simply squeezed some fresh lemon juice over the top. I find it easier to poach my egg in water and white wine vinegar in a frying pan rather than a saucepan as this enables the egg to be flatter, allowing the egg to happily sit on the pancake.
