Shourbat Adas (Lentil Soup) Recipe

When in Jordan one dish that I saw that was available at most places was lentil soup (shourbat adas). Here is the recipe I used when taking a class at Petra Kitchen in Jordan whilst on holiday.
Lentil Soup Ingredients:
1 cup brown lentils
1/2 tsp salt
1/4 cup olive oil / ghee
1/2 cup parsley, finely chopped
6 cups water
1 onion, finally chopped
1/2 tsp cumin
pinch of pepper
Croutons for garnish
Lentil Soup Method:
1. Rinse lentils and drain
2. Place lentils in pan with water over a medium heat and bring to the boil.
3. Reduce heat and simmer for half an hour.
4. Remove from heat, strain the mixture.
5. Return the mixture to the pot, cook over a medium heat and stir in cumin, salt and pepper.
6. In a seperate pan brown the onions in the olive oil or ghee, then add to the lentil mixture.
7. Cook the lentils and onion over a medium heat for 5 mins.
8. Sprinkle the soup with chopped parsley and croutons before serving.
