When hosting dinner parties I do find that having everything ready at the same time for all 3 courses can be a little too stressful for my liking. I find myself spending more time plating up rather than being with my guests. The great thing about Mezze in Middle Eastern cooking is that they are designed to be shared and don't necessarily have to be on the table at the exact time. This adds a nice relaxed environment to a dinner party and can be a great option for buffets and parties. When I was in Jordan last February I attended a cookery class at Petra Kitchen. I didn't learn any new cookery skills but I did learn to put together a fabulous meal fit for a Middle Eastern King.
